Eating of The Pantry: Week Two Wrap Up




It has been another fun week of eating out of the pantry for our family! BJ went out of town on Wednesday so I have really only been cooking for 1 and 1/2 people since. I wanted to share what our actual menu ended up being and you can compare it to our planned menu. I was a little flexible since there were less people to feed. Trey helped me with each meal and it was a fun time together!

Monday-Turkey Surprise (To be honest I couldn't come up with a better name, sad but true!)



Ingredients:
-Leftover chopped turkey from the freezer
-Frozen mixed veggies
-brown rice (why can't I make good rice, it always comes out crunchy! Oh well.)

Tuesday
-Salmon patties (these will be our new chicken nuggets! They were surprisingly yummy!)
-Frozen broccoli in cheese sauce
-canned biscuits






-Banana chocolate chip muffins (I used Moneysavingmom's banana bread recipe) I highly recommend these. We ate them all and BJ was not even here!






Wednesday


Cheese, corn, and black bean Quesadiallas
-frozen corn
-canned black beans
-shredded cheese

*Topped them with sour cream and my aunt's canned salsa (delicious!)

Thursday



-Turkey Surprise over whole wheat rotoni noodles
-Banana chocolate chip muffins for dessert

Friday-Grits cassorole with sausage links
-3 packs instant grits(make according to package)
-1 cup shredded cheese
-2 eggs
-1/2 package lil smokies (sliced in thirds)


*Mix all ingredients together in mixing bowl. Pour into 8x8 cassorole dish. Bake at 350 for 30 minutes or until center is set. You can slightly adjust recipe to taste and preference. Also you can add other veggies or meats too. Serves 3-4 people with sides like fruit or biscuits.


So that was our dinners for the week. We are leaving on Saturday to go meet BJ and travel to visit some of our supporters, we will be back late Sunday. I hope your week went well and I wanted to leave you with our purchases of the week from Bi-Lo.


1 Box Yogurt Pretzels-$1.64 (B1G1 price)
-$1.00 Nabisco mq= $.64 OOP

(5) packages Vegall Frozen veggies-$1 (B1G1 price)
-(5) $.55 mq (doubled)= Free+ $.50 overage

Bananas-$1.11

Total OOP=$1.40(includes $.15 sales tax)
Total before store savings and coupons-$14.40
Savings of 91% (It was a small shopping week, but big in savings!)

    Great job on your shopping! You found some great deals. That's always fun.
    Sorry the boys are getting up so early. That stinks. When Halley gets up earlier than 7, I try to get her to go back to bed til 7 (or I send her to get in bed with Eddie). And if the twins wake up, I just let them cry themselves back to sleep (fortunately they can sleep through the other's crying...wierd twin thing, I guess). If not, they just babble til I come and get them. I do my best to get up at 6 b/c that's the quietest time of the day!
