February Freezer Cooking Day Recap

So I was not really sure what to expect, this being my first experience at Once A Month Cooking. My cooking/bake day was Saturday, we ate breakfast as a family and I got started about 10 a.m. and worked until about 5 p.m. (with some small breaks of course!). Actually I got a lot done, not all but most of what I had planned to cook/bake I was able to finish. I have loved the fact that we have muffins and banana bread ready at a moments notice and also that several dinners and sides are in the freezer waiting for their cue. Here is what I did get done:

1 loaf banana bread
1 batch banana chocolate chip muffins
1 batch banana muffins
2 grits casseroles
Black beans, kidney beans, and Lima beans
2 Spaghetti cheese pies
1 green bean casserole

(Unfortunately, our camera was not working on Saturday so instead I took a pic of our stacked fridge today!)

There are a few things I had on my list that I did not get done but I am going to try to get them done in the next week. These will include:

1 batch pancakes
1 batch oatmeal raisin muffins
2 green bean casseroles

I was surprised at how motivated I was and accomplished I felt at the end. It feels great too that we have some good stuff ready to eat!
