Freezer Daze Again In March!





I am participating this month again in Once A Month Cooking or March Freezer Daze with Crystal from Money Saving Mom and Jessica from Life As Mom.  Jessica has a great post on the basics of OAMC.   I will be cooking/baking this Saturday, February 27th and would love for you to join me!   If you are unfamiliar with Once A Month Cooking or just by the name it seems a little overwhelming let me ease your fears and share how it works.  I am not a cook or baker by nature but I am very practical, and Once A Month Cooking is very practical.  You can premake 30 meals or  a couple of cassoroles , bread or whatever works best for your family.  The goal is to make things easier for you for the rest of the month and save money.  This has really helped us as I am now working a small  part-time job to help us pay off debt.  I have made a list of several items that I am going to premake and freeze so throughout the month we will have meat already prepared or cassoroles already made or specialty breads/muffins ready for snacks.  Here is what I am making:

2 loaves banana bread
2 batches of pumpkin chocolate chip muffins
2 green bean cassoroles
Lentils
Venison browned with taco seasoning
Venison browned with chili seasoning
2 grits casseroles
Pancakes

Pumkin Chocolate Chip Muffins Recipe:

1 2/3c. flour
1 c. sugar
1 tsp. pumpkin pie spice
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
2 large eggs
1 c. canned pumpkin
1/2c. melted butter
1 c. chocolate chips

Preheat oven to 350.  Mix flour, sugar, pumpkin pie spice, cinnamon, baking soda, baking powder in large bowl.  In small bowl, beat eggs, pumpkin and butter.  Add this to large bowl of dry ingredients.  Stir in chocolate chips.  Spoon mixture into muffin pans-greased.  Bake at 350 for 20-25 minutes. Makes 12 muffins.
