After being gone for almost a week and a half I am actually thankful to get back and have a planned menu for us all. I am realizing more and more that this is not just a post for a menu but also accountability to use up what we already have and shop for just the few items needed to complete our dinners. I thought I would try also to be more proactive in planning for our breakfast and lunches, so this is what I came up with this week:
*Sides of fruit, yogurt, or granola
- Ham sandwiches
- Chicken Fries
- Tuna Salad Sandwiches
*Sides of fruit, yogurt, and granola
- Tacos (beef, cheese, sour cream, salsa) and refried beans
- Spaghetti (beef, noodles, sauce) and cheese biscuits
- White Bean Chili and cornbread or cheese biscuits
- Quesadillas (black bean, corn, and cheese)
*We are having a date night and two nights we will be eating out with students who will be in town for a retreat.
