Once A Month Cooking Recipes (Meals)

In my last post I shared the recipes for the breads I made.  They were delicious!  In this post I wanted to share about the casserole dishes I made:

The first one was Sour Cream Chicken Enchiladas from Erin at 5 Dollar Dinners.  I made two casserole dishes of this.  I tried the sour cream, green chilis, and chicken broth sauce and it was absolutely delicious!  I can't wait to try the whole dinner!

The second was a recipe a friend recently made for us at her home:

Mexican Vegetarian Casserole (Southern Living)

1 can (15 1/2 oz.) can whole corn, drained
1 can (15 oz.) black beans (drained and rinsed)
1 can (10 oz.) whole or diced tomatoes with green chilis
1 carton (8 oz.) sour cream
1 jar (8 oz.) picante sauce (mild, medium, or hot)
2 cups (8 oz.) shredded cheddar cheese
2 cups cooked rice (yellow)
1/4 tsp. pepper
1 bunch green onions, chopped
1/4 cup chopped olives
2 cups (8 oz.) shredded Monterey Jack cheese

Preheat oven to 350 degrees.  In large mixing bowl combine the corn, beans, tomatoes, picante sauce, cheddar cheese, rice, and pepper.  Spoon into lightly greased 13x9x2 casserole dish.  Sprinkle with onions, black olives, and Monterey Jack cheese.  Bake in the oven for 50 minutes.  Prep time takes about 20 minutes.

Variations: We had this dish while staying with a friend, she made this without the onions (my husband dislikes them), she substituted the yellow rice with white, and she used diced tomatoes without the chilis, and she had pinto beans rather than black beans. In my dishes I made for OAMC I used brown rice, used salsa rather than picante, tomatoes without chilis, no onions, or olives (hubby dislikes these too).

This dish is easy to make and great for all my vegetarian friends!  Also, if you have leftovers you can just roll them into a tortilla for yet another meal.  I doubled the recipe and it made 3-8x8 dishes!  Thanks, Lisa for the recipe.
